As with anything that works, the idea is very simple. You go back to the roots of how pork pies and their cousins used to be made and enjoyed, using the right ingredients, traditional methods and eating them fresh from the oven without ever seeing the inside of a refrigerator.

The problem with the way the vast majority of pies reach the public these days is down to what they go through after production and baking and how the product needs to be designed to have a long shelf life and survive the supply chain. That’s when thick over-baked pastry and lots of unnecessary preservatives come into play.

The J Lord & Son ‘Take & Bake’ range overcomes this problem as the product is supplied frozen and raw to be finished off at point of consumption. This allows for greater stock control, less wastage and requires fewer deliveries as the product can be held in frozen storage much longer than chilled lines. More importantly, it results in an unbeatably fresh product whose eating quality cannot be matched by a pie that has been chilled after baking and before consumption.
